Malting & Milling: A Touch of Peat Smoke
Benromach revives the lost art of Speyside whisky by malting barley with a hint of peat smoke, giving its whisky a robust character. The barley is then ground into grist using a traditional four-roller ‘Boby’ Mill, a key element that contributes to Benromach’s unique flavor profile. This malting and milling process is essential in building the foundation of Benromach’s whisky, providing depth and richness in every sip.
Mashing: Precision and Control
During the mashing process, the flow of pure water from the local Chapelton Spring is controlled by hand. This water is carefully mixed with the grist in the mash tun, with distillers closely monitoring the speed and temperature to ensure optimal sugar extraction. This attention to detail allows Benromach to create a new-make spirit with rich, malty flavors that serve as the base for its signature single malt.
Fermentation: Long and Complex
Benromach uses an extended fermentation process that lasts between three and five days, conducted in traditional larch washbacks. By using both brewer’s yeast and distiller’s yeast, Benromach achieves a more complete fermentation, allowing complex flavors to develop. The yeast is measured and sprinkled by hand, a method that maintains the genuine character of Benromach whisky and ensures consistency in flavor.
Distillation: Craftsmanship in Copper
Benromach’s double distillation process takes place in two custom copper pot stills,
producing a medium-bodied spirit ideal for various lengths of maturation. Distillers manually ‘settle’ the wash still and perform a traditional water test to gauge purity. During the critical ‘cut’ moment, the distillers select only the best part of the distillation—the ‘sweet heart’—which is then sent for maturation in high-quality casks.
Maturation: The Art of Aging in First-Fill Casks
Maturation at Benromach is a careful, controlled process. The whisky is aged in first-fill oak casks, previously seasoned with bourbon or sherry, which impart deep flavors and complexity to the spirit over time. Each cask is hand-filled and stored in traditional dunnage-style warehouses that maintain a consistent, cool temperature ideal for aging single malt Scotch whisky. Regular monitoring ensures that Benromach maintains its high quality standards, allowing the whisky to develop its full character.
